Today in Artful Agriculture: Potato Towers! This simple method allows the home gardener to grow an otherwise space-hogging crop in a small footprint that produces big yields. Simply form a cylinder from 2″x4″-opening fencing and start laying straw around the inside perimeter. Start filling the inside with garden blend soil. Starting about a foot up, place three potato starts configured in an equilateral triangle with their eyes or shoots peeking out of the straw. Repeat every 8″ while rotating the triangle to ensure enough space for the developing tuber. At the top, plant salad greens that protect the soil and serve as an indicator that your tower needs water. When the plants have mostly died back, tip the tower over to harvest!
